One Pot Lemon Chicken Orzo
French ovens & skillets don’t just make beautiful, hearty meals. But thanks to Staub Canada, they can also make delicious lighter ones with a whole lotta flavour.
This meal is great for a heartier lunch or a light dinner. I like it because you can sometimes win over pickier eaters with this dish… and you can easily have it ready to serve in an hour!

ONE POT LEMON CHICKEN ORZO
Prep time: 15 minutes | Cook time: 30 minutes | Serves 4
Ingredients
4 chicken breasts
Salt ‘n pepa
2 lemons,
2 cups of orzo pasta
4 cups of chicken broth
1/2 a bunch of kale, loosely chopped
4 cloves of garlic, smashed & roughly chopped
Extra virgin olive oil, or, a vegetable oil like grapeseed oil
Fresh dill, for garnish
3/4 cup of feta, crumbled
1/3 cup of butter
Directions
Using your french oven, set the stove on medium-high and add enough cooking oil to cover the bottom of the oven.
Season your chicken with salt & pepper, lightly fry the chicken till it is golden brown on the stove, remove the chicken from the heat and set aside.
In the same pot, add the orzo & and garlic. Cook the garlic + orzo till garlic is cooked & orzo is light brown. When you see this, squeeze a whole lemon of juice in the pot and toss it till the juice reduces.
Once the lemon juice reduces, add the chicken broth, half a cup at a time. Once all the broth is in the pot, cover it and put the heat to medium-low for about 5 minutes.
Preheat the oven to 350 degrees.
Remove the lid and add the kale & butter. Toss till kale is properly covered by the orzo.
Add the chicken back into the pot, if there is no more broth in the pot, add about 1/2 a cup more broth & cover the pot. Turn off the stove and set the covered pot into the oven.
After 15 minutes in the oven, remove the lid, add a whole sliced lemon and leave for 5 minutes.
Put the oven to broil and leave for 2 minutes.
Serve the lemon chicken orzo with fresh dill & feta. The more the merrier.
