Easy Homemade Rye & Apple Grilled Cheese
There’s nothing more comforting than a warm sandwich and a cup of hot soup now that the wet season has officially rolled into our Vancouver winter. I’ve been dying to make some bread for a while and thanks to Hamilton Beach, I can make our household entire loaves for a week’s worth of meals each time!
Bread can be intimidating because of yeast. This magical ingredient can be tricky to work with for newbie bakers, as I quickly realized being one myself. But with the help of this beautiful, gifted bread-maker, baking bread is a slice! I had no idea it could be as simple as throwing ingredients together in a certain order and waiting 3 hours *mind blown*

Bread-maker Rye Bread
Ingredients
1 cup of Rye flour
2 cups of bread flour
2 teaspoons of baking powder
Pinch of salt
2 teaspoons of caraway seeds
2 tablespoons of sugar
2 teaspoons of instant yeast
2 tablespoons of butter or vegetable oil
1 cup of water
directions
Add all the ingredients in this order:
Wet (Oils + Water, sometimes I add salt here too to separate it from the yeast)
Dry
Yeast
Set it to a basic bread cycle for 1.5lbs. This process takes 3 hours
Once finished, remove the bread from the bucket & the paddle from the bottom of the loaf. Let cool on a cooling rack for 10 minutes.

Apple Grilled Cheese
I’ve played around with making the perfect grilled cheese over the years and fiiiiinally was able to make a delicious, different kinda grilled cheese where you got that extra kick & crunch in every bite. Don’t get me wrong, all grilled cheese sandwiches are amazing. This is just a personal preference that is always a hit in our home as well with our friends. You can always swap the apple out with a protein, such as a ham or a prosciutto, or a medley of cheeses, you name it—it’s delicious!
Ingredients
2 slices of bread-maker rye bread
2 slices of cheese (I used cheddar)
Thinly sliced apple (I used red delicious apples here)
Butter
Pecorino cheese (Freshly grated)
Olive oil
Dill, for garnish
Directions
With a small pan, turn on the stove & set to medium high
Add EVOO + a generous scoop of butter. Let melt.
Once the butter starts to bubble, grate about half a tablespoon of pecorino cheese.
Add a slice of bread on the cheese, move it around the pan so all the cheese sticks onto the slice.
Add the sliced cheese so it covers the bread, watch out for any excess on the sides as they may melt over the sides of the bread
Add the sliced apples & another layer of cheese
Put the second slice of bread on top & press down
Before you flip the sandwich, add another generous scoop of butter with grated pecorino
Flip the bread on top of the butter + cheese mix & move around the pan to ensure all the cheese sticks onto the bread
Let cook till you see the cheese inside the sandwich melt. Pull the flame down to a medium so it doesn’t burn the bread. If you think the cheese isn’t melting fast enough for the outside of bread, cover the pan with a lid and let cook for about a minute
Set the sandwich aside & slice in half
Serve with soup, apple slices & garnish with dill
